Massanera is a wine estate located on the hills of San Casciano Val di Pesa, in the famous Chianti Classico area. The territory of the Chianti Classico is famous only for its excellent wines and oils, but also for its marvelous views, the villages of the parish churches, evidence of ancient cultures. The estate has 30 hectares of vineyards and olive groves. In addition, the property includes woods and a hill lake accessible to guests of the farm. The structure has a restaurant with typical Tuscan cuisine with dishes prepared with products at zero km, or production of the estate.

In the restaurant Massanera Agriturismo offers typical Tuscan dishes at zero km, that is with products of the estate such as vegetables from the garden, fresh homemade pasta, extra virgin olive oil, wines, salami. The main dishes are: cutting board tasting of cinta senese, grilled pork Cinto, lamb of Camerum, game and fresh pasta. Massanera also offers a menu for vegetarians, for celiacs and people with food intolerances and dishes for children. The average price of a lunch or dinner is around € 40.00.

Massanera farmhouse offers typical Tuscan cooking courses led by a professional Chef. In the course you will learn how to prepare pasta in its various variations such as tagliatelle, tortelli, ravioli, gnocchi, pappardelle with its sauces and fillings.In the preparation of the dishes are used ingredients related to the seasons, coming mostly from the company. Vegetables and aromatic herbs are harvested directly from the garden and the meat comes from most of the animals of the estate such as Cinta Senese pigs, lambs, chickens, capons, ducks, pigeons, etc. At the end of the course you can taste the menu prepared by you accompanied by wines suitable for every type of dish. The lessons include a lunch or a complete dinner from appetizers to desserts.
TASTINGS OF PRODUCTS OF THE FARM
In the Massanera farmhouse customers can taste the various farm products including 9 types of wines, bitter herbs, extra virgin olive oil, Cinta Senese salami and homemade pasta. Guests can purchase the company’s products. In addition, the company organizes guided tours of the winery.
In 30 hectares of vineyards the cultivated uvagi are mainly Sangiovese and Canaiolo. The cellars are in an underground environment with regard to aging in wood and in a conditioned environment for the fermentation and storage departments.
Tuscan Sangiovese vine selected from the Massanera vineyards. Fermentation in stainless steel vats, two replacements a day until racking. Maturation in French oak barrels in underground cellar and partially, in steel in a conditioned environment. Aging in bottles for 3 to 9 months. Characteristics: ruby red color, intense aroma of ripe red fruit, iris, cinnamon, fresh, dry and persistent taste.
Chianti Classico Riserva
Tuscan Sangiovese vine 90%, other red berried grapes 10%. Fermentation in 30 hl oak vats. with two replacements a day until drawing off. Elevation in French oak barrels from lt. 500 for 1-3 years and bottle aging for at least 6 months in a conditioned environment. Characteristics: intense ruby red color, scent of black fruit, blueberry, plum, rose hip, long and enveloping with a tendency to become more complex and important over time.
Red table and bed wine. Grape variety: Tuscan Sangiovese with additions of other red berried grapes. Vinification in steel vats and steel maturation in conditioned cellar. Aging in bottle in conditioned cellar for at least 3 months. Characteristics: red color, aromas of fruit, cherry, plum, apple, fresh taste.
Nobilbiondo di Massanera
Trebbiano Tuscan vine with additions of other white grapes. Vinification in steel vats at a controlled temperature. Maturation in steel in conditioned cellar. Aging in the bottle for at least 3 months. Characteristics: light straw-yellow color with scents of flowers, rose, iris, lily of the valley, fresh and harmonious taste.
Tuscan Sangiovese vine 50%, 50% Merlot. Fermentation in 30 HL oak vats with two pumpovers every day until racking. Maturation in French oak barrels from lt. 0,500 and barrique of American oak from lt. 0.250, first step, medium toasting. Aging in the bottle for at least 6 months. Characteristics: intense ruby red color, sweet aromas of walnut, coconut and vanilla and red fruit.
Prelato di Massanera
Tuscan Sangiovese vine grown in Massanera. Fermentation in 30 hl oak vats. with two replacements a day until drawing off. Maturation in French oak barrels from lt. 500 for 1-3 years and bottle aging for at least 6 months in a conditioned environment. Characteristics: intense ruby red color, perfume: black fruit, blueberry, plum, rose hip, long and enveloping with a tendency to become more complex and important over time with persistent taste on the palate.
Rosato di Camilla
Vine obtained by bloodletting from Sangiovese grapes at the beginning of fermentation. Vinification in steel in a conditioned environment.
Characteristics: Rosé color, scent of partially sour red fruit with tobacco tips and bitter honey. In the mouth it has a pleasant sensation of freshness with aromas reminiscent of the sour cherry and the green plum.
Young wine of Massanera
Produced with classic Chianti grapes of young vines, harvested by hand in small boxes. Vinified in steel with 2 remouldings a day. Bottled and refined for at least 2 months in the bottle.
Neroamaro of Massanera
Bitter produced from wild herbs gathered on the lands of Massanera in particular periods of the year and lunar phases, with an addition of small quantities of saffron and rhubarb. Aging: at least one year in the bottle. Alcohol: 37% of alcohol by volume. Characteristics: orange-brown color, opalescent, scent of roots of various wild essences, leather, spices with a balanced taste, bitter, strong and soft at the same time.
Grappa Bianca of Massanera
Produced with lightly squeezed pomace of Sangiovese harvested in Massanera. Discontinuous distillation immediately after racking. Aging: at least one year in the bottle. Alcohol: 42% of alcohol by volume. Features: transparent white color, scent of robinia flowers, important red wines, leather, distant aromas of spices, strong taste and long aftertaste.
EXTRA VIRGIN OLIVE OIL
The olive groves extend over an area of about 8 hectares. The cultivated varieties are: moraiolo, leccino, frantoio. The collection is carried out exclusively by hand. The extra virgin olive oil produced by the Massanera estate has a green color tending to golden yellow and an intense fruity taste, slightly to a pinch.
TUSCAN CINTA SENESE
The farm has a breeding of animals of the precious Cinta Senese pig breed, now almost extinct and living in a semi-wild state in the Massanera woods feeding on acorns, wild tubers, roots and truffles. The meats obtained from the precious pork are processed in compliance with the traditions of Tuscan pork butchery. The products are varied: pork, bacon, hams, capocollo, air-dried sirloin, salami, finocchiona, bacon, lard with aromatic herbs.
The “Cinta Senese” is a black pig with a white stripe (cinta) that for centuries has been a cheap protein source for generations of Tuscan farmers. Very rustic animal, always bred to the semi-wild state, it derives its nourishment almost exclusively from the products of the wood, thus hardly affecting the costs of the thin family budgets. From the ’50s on, on behalf of investments in pig farms more easily inflatable with feed prepared for rapid growth, the Cinta Senese breed was reduced to very few. For some years it has been revived to the market by a group of Tuscan farmers gathered in an association called “Compagnia della Cinta” and subsequently in a consortium organization based at the Massanera Farm in San Casciano Val di Pesa.
The “Cinta”, given that it lives in a semi-wild state, grows much slower than its similar breed in the stable. Its meats are however much tastier and with vague hints of the plants and the fruits of which it is fed. The “Compagnia della Cinta” through the consortium association has been offering these delights to the market for some years, guaranteeing them with its own registered trademark.
